In a saucepan, saute the onion, carrot and celery with the olive oil. Then add the tomato, the spices and a glass of water. Let it boil. Lower the heat, add the barley, the parsley and mix at regular intervals. Add as much water as needed during cooking. Check the taste, adjusting accordingly.
